Real Rye breads
Specialty breads made the old fashioned
way, with natural imported sour-dough, untreated flour and the
less processed raw materials that are todays choice. Real
hearth baked, double crusted breads, baked for over an hour to
allow the natural, intrinsic taste and flavor of the grains and
flours to develop, are todays choice.
Rudolph’s Specialty Bakeries makes more than 28 varieties, ranging from very light
to very dark real rye breads. Never are they rushed for the sake
of shortcuts. No sugar, fat, or other chemicals are introduced to
the breads. Only natural taste and flavor.

Special 100% Rye breads
Specially created and developed to assist consumers controlling
their diets, with particular concern for low
tolerances and allergic reactions to wheat, wheat gluten, yeast
and those on low or no salt diets. These are all natural, good
tasting products made with Certified Organic rye flour, whole rye grains,
spring water, salt, and sour-dough rye flour.
100% Rye bread (red label) made with 100% ground rye flour, is smooth texture and
mild tasting.
100% Rye Bread with Whole Grain (brown
label): as above, with the additional fiber*
, and natural goodness of softened whole rye grain.
100% Rye Bread with Linseed/Flax Seeds
(green label): as above, with the additional
fiber*, dietary and laxative properties of softened linseed/flax
seeds.
100% Rye Bread Salt Free (blue label):
rye bread containing no salt for those consumers on sodium restricted
diet, is smooth textured and very palatable.
100% Rye bread with Sunflower Seeds (yellow
label): a rye bread with the taste pleasing
and nutritional values of sunflower seeds.
These special Certified Organic 100% rye breads
(supplied only frozen), are double wrapped with a high density plastic inner shrink wrapper to protect against
freezer burns and a color
coded, printed, re-closable food-grade outer polyethylene bag. Each loaf is
sliced and weighs one pound.
All our one pound retail packages are again packaged in a clear food-grade PVC
shrink wrap for moisture retention and protection against freezer
burns.
Depending on the variety and size format, shelf-life is from 8
days to 3 weeks un-refrigerated and unfrozen.
Frozen, the breads last months without loss of their flavor and require
only thawing to be reconstituted.
For areas not serviced by local distributors, breads are shipped
fresh (via UPS) or frozen in either cases of 17 or 36 lbs.

* DO NOT REFREEZE BREAD ONCE IT THAWS.
* Bread will keep for many days when stored correctly.
The more moisture in the bread, the longer it will keep. Be sure to put the bread in an airtight container or a plastic bag, which you can seal tightly.
If you are not going to eat the bread within 2 to 3 days, put it in the freezer. Just wrap the bread in plastic (double bag), to keep the moisture in. Then thaw at room temperature (preferred) or defrost in the microwave.
After thawing, to refresh the bread's crust, take out of plastic, put on a cookie sheet, and bake at 250° for 2-3 Minutes, 1-2 minutes (sliced) .
